  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt

  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 and 1/2 cups peeled and shredded apple
  • 3/4 cup chopped walnuts (optional)
  • 1/2 cup granulated sugar for topping
  • 1 and 1/2 teaspoons ground cinnamon for topping
  • 2 tablespoons melted butter for topping

Instructions

  1. In a small saucepan, simmer the apple cider until reduced to 1/4 cup; let it cool.
  2. Preheat your oven to 425°F (218°C) and prepare a muffin pan.
  3. Whisk together dry ingredients: flour, baking powder, baking soda, salt, and spices in one bowl.
  4. In another bowl, mix wet ingredients: oil, sugars, eggs, applesauce, and cooled cider.
  5. Combine wet and dry mixtures gently; fold in shredded apples and walnuts if using.
  6. Fill muffin liners to the top with batter and bake for 5 minutes at high temperature; then lower to 350°F (177°C) for an additional 15–16 minutes.
  7. Cool slightly before brushing with melted butter and rolling in cinnamon-sugar if desired.
