  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • ¼ cup unsalted butter (for topping)
  • ½ cup brown sugar (for topping)
  • ½ teaspoon cinnamon
  • 3 bananas (sliced)

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, brown sugar, and melted butter in a bowl; press into a springform pan and bake for 10 minutes. Let cool.
  2. In another bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing on low speed. Incorporate sour cream, vanilla extract, and flour. Pour over crust and bake for 50–60 minutes until set but slightly jiggly in the center. Cool in the oven for an hour, then refrigerate for at least four hours.
  3. For the topping, melt butter in a skillet over medium heat; stir in brown sugar and cinnamon until bubbly. Add sliced bananas and cook until caramelized. Remove from heat and carefully add dark vanilla extract.
  4. Serve cheesecake slices topped with warm bananas foster.
