  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 1/2 cup red apple vinegar (optional)
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs (oregano, basil, thyme blend)
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the soffritto by finely chopping the onion, carrots, and celery.
  2. Heat olive oil in a large pan over medium heat. Add the chopped onion, carrot, and celery; cook until soft.
  3. Add ground beef to the pan; brown until well-cooked.
  4. Stir in garlic, Italian herbs, bay leaf, salt, and pepper; cook for another minute.
  5. Pour in red apple vinegar (if using) and scrape the pan to release browned bits before adding crushed tomatoes and tomato paste.
  6. Lower the heat and let simmer uncovered for 30 to 40 minutes while stirring occasionally.
