  • ½ cup all-purpose flour
  • 3 cups whole milk
  • 8 oz Velveeta cheese, cubed
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook rotini pasta in boiling salted water until al dente (9–10 minutes). Drain and reserve ½ cup of pasta water.
  2. Season chicken with Cajun seasoning and garlic powder; sauté in olive oil until golden brown and cooked through (6–8 minutes). Set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Whisk in flour to create a roux.
  4. Gradually add milk while whisking until smooth; simmer until slightly thickened (3–5 minutes).
  5. Stir in Velveeta, cream cheese, mozzarella, and Parmesan until melted.
  6. Toss cooked pasta and chicken into the sauce; adjust consistency with reserved pasta water if needed.
