  • 12 oz bowtie pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon Cajun seasoning (for the sauce)
  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente (10-11 minutes). Reserve ½ cup of pasta water, then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add chicken pieces seasoned with Cajun seasoning and garlic powder. Sear until golden brown (8-10 minutes). Remove and set aside.
  3. In the same skillet, lower the heat and add more butter and minced garlic. Sauté until fragrant.
  4. Stir in heavy cream and milk; simmer briefly before adding Velveeta cheese until melted.
  5. Mix in mozzarella, Parmesan cheese, and remaining Cajun seasoning. Combine with cooked pasta, adding reserved pasta water as needed for consistency.
  6. Serve hot with optional parsley garnish.
