  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

  1. In a medium saucepan, combine cranberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally.
  2. Reduce heat and simmer for about 10 minutes until the cranberries burst and thicken. Stir in vanilla extract after removing from heat.
  3. Allow the sauce to cool at room temperature before refrigerating for at least 30 minutes.
  4. Melt chocolate chips and coconut oil in a microwave-safe bowl, heating in intervals until smooth.
  5. Scoop chilled cranberry sauce onto parchment-lined baking sheets.
  6. Dip each mound into melted chocolate until fully coated and place back on the sheet.
