  • ½ cup powdered sugar
  • ¼ cup unsweetened cocoa powder (plus more for rolling)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: Finely chopped nuts or shredded coconut for coating

Instructions

  1. Drain the ricotta using a fine-mesh strainer for at least 30 minutes to achieve the right texture.
  2. In a mixing bowl, combine drained ricotta, melted dark chocolate, powdered sugar, cocoa powder, vanilla extract, and salt. Mix until smooth.
  3. Cover and refrigerate for 1–2 hours to firm up the mixture.
  4. Scoop out portions and roll into 1-inch balls.
  5. Coat each truffle in cocoa powder or your choice of toppings.
  6. Place on a parchment-lined tray and refrigerate for another 30 minutes before serving.
