  • 2 tbsp brewed strong coffee (cooled)
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour

  • 1 tsp instant coffee granules
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream softened butter and granulated sugar until light and fluffy.
  3. Add the egg, cooled brewed coffee, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together flour, ground cinnamon, instant coffee granules, baking powder, baking soda, and salt; gradually add to the wet mixture until just combined.
  5. Chill the dough for about 30 minutes in the refrigerator.
