  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 cup plain Greek yogurt
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ½ teaspoon chili flakes (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. In a mixing bowl, whisk together Greek yogurt, olive oil, minced garlic, lemon juice and zest, cumin, smoked paprika, oregano, coriander, chili flakes (if using), salt, and pepper until smooth.
  2. Add chicken pieces to the marinade and coat thoroughly. Cover and refrigerate for at least 1 hour or overnight.
  3. Cook the marinated chicken by grilling over medium-high heat for 5–7 minutes per side until charred; baking at 400°F (200°C) for 20–25 minutes; or pan-searing in a skillet over medium heat for 5–6 minutes per side.
  4. Garnish with fresh parsley or cilantro before serving.
