  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Place raw chicken in the slow cooker and top with chopped onion, minced garlic, Italian seasoning, red pepper flakes (if using), and crushed tomatoes.
  2. Pour chicken broth over all ingredients, cover, and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  3. Remove the chicken, shred it with forks, and return to the pot.
  4. Stir in heavy cream; if you'd like a thicker soup, mix cornstarch with cold water before adding it.
