Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • 16 oz (2 packages) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 8 oz semisweet or dark chocolate, melted and slightly cooled
  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C) and line a 9×9-inch baking pan with parchment paper.
  2. For the brownie base, whisk melted butter, sugar, eggs, and vanilla together. Stir in flour, cocoa powder, and salt until just combined. Spread into the pan and bake for 15 minutes.
  3. To make the cheesecake layer, beat cream cheese and sugar until smooth, then add eggs one at a time. Mix in sour cream and melted chocolate until combined. Pour over the brownie base.
  4. Bake for an additional 35-40 minutes until set but slightly jiggly in the center. Cool completely before chilling in the refrigerator for at least 4 hours.
  5. For the ganache topping, heat heavy cream until simmering and pour over chocolate chips; stir until smooth. Spread on top of chilled cheesecake bars.
  6. Refrigerate again for 30 minutes before slicing into squares to serve.
