  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 fresh peaches, sliced
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey (or maple syrup)
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh basil or parsley, for garnish

Instructions

  1. Pat the chicken dry and season with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/74°C). Transfer to a plate and keep warm.
  3. In the same skillet, sauté minced garlic for about 30 seconds. Add balsamic vinegar, honey (or maple syrup), and thyme; simmer for 3–4 minutes until thickened.
  4. Gently add sliced peaches to the skillet and cook for about 2–3 minutes until softened.
  5. Return the chicken to the skillet, spooning the caramelized peaches and glaze over it. Simmer for an additional 1–2 minutes to meld flavors.
  6. Garnish with fresh basil or parsley before serving.
