  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon saffron threads (soaked in warm water)
  • Juice of 1 lemon
  • Optional: 2 tablespoons plain yogurt (for marinating)
  • Fresh parsley or cilantro (for garnish)

Instructions

  1. In a large mixing bowl, combine olive oil, minced garlic, turmeric, cinnamon, nutmeg, black pepper, salt, lemon juice, saffron water, and yogurt (if using). Mix well.
  2. Add chicken pieces to the marinade and coat evenly. Cover and marinate for at least 1 hour or overnight for maximum flavor.
  3. Preheat your oven to 375°F (190°C) or heat a skillet over medium heat.
  4. For roasting: Place marinated chicken on a baking sheet and bake for 35–45 minutes until the internal temperature reaches 165°F (74°C).
  5. For sautéing: Cook marinated chicken in the skillet for about 20–25 minutes until fully cooked through.
  6. Let the chicken rest for a few minutes before serving and garnish with fresh parsley or cilantro.
