  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually combine dry ingredients into wet ingredients until just blended.
  5. Fill muffin tin about two-thirds full with batter.
  6. Bake for approximately 18 minutes or until a toothpick comes out clean.
  7. Allow cooling for 5 minutes before transferring to a wire rack.
