- 2 large ripe bananas
- ½ cup pitted dates
- 2 tablespoons coconut oil or nut butter
- 1 teaspoon vanilla extract
- 1 ½ cups rolled oats
- ½ cup almond flour or oat flour
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- Pinch of salt
- Optional: ½ cup raisins, chopped nuts, or unsweetened dark chocolate chips
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a food processor, blend bananas and dates until smooth; then mix in melted coconut oil or nut butter and vanilla extract.
- In a large bowl, combine rolled oats, almond flour, cinnamon, baking soda, and salt.
- Stir the banana-date mixture into the dry ingredients until thick dough forms. Add optional mix-ins if desired.
- Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly.
- Bake for 12–15 minutes until edges are lightly golden.
- Cool on the sheet for 5 minutes before transferring to a wire rack.
