  • 12 tablespoons very cold unsalted butter
  • ½ cup very cold heavy cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • Pinch of kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 375 degrees F and line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse to mix.
  3. Add cold butter and pulse until the mixture resembles coarse crumbs.
  4. In a bowl, whisk together heavy cream, one egg and one yolk. Gradually add this mixture to the flour mixture until a dough forms.
  5. Shape the dough into a disc and chill for 30 minutes in the freezer.
  6. Roll out the dough and cut into desired shapes.
  7. Brush with reserved egg white and bake for 20–22 minutes until golden brown.
  8. While baking, prepare the glaze by whisking powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  9. Once cooled, dip each scone in the glaze before serving.
