  • 2 large eggs, room temperature
  • 1 cup sour cream (or plain Greek yogurt)
  • 2 teaspoons vanilla extract
  • 1 ½ cups diced fresh or canned peaches (drained well if canned)
  • ½ cup caramel sauce (store-bought or homemade), divided
  • ½ cup all-purpose flour (for crumb topping)
  • ¼ cup brown sugar (for crumb topping)
  • ¼ cup granulated sugar (for crumb topping)
  • ½ teaspoon cinnamon (for crumb topping)
  • ¼ cup unsalted butter (for crumb topping, melted)
  • ½ cup powdered sugar (optional glaze)
  • 12 tablespoons milk or cream (optional glaze)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a jumbo muffin pan with liners or grease.
  2. In a bowl, mix together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, combine melted butter, brown sugar, granulated sugar, eggs, sour cream, and vanilla until smooth.
  4. Gently fold dry ingredients into the wet mixture; then stir in diced peaches.
  5. Fill muffin cups halfway with batter. Add 1 teaspoon of caramel sauce in the center of each cup and top with remaining batter.
