  • 3/4 cup unsalted butter, softened to room temperature

  • 3 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup buttermilk, at room temperature and divided
  • 1/2 teaspoon espresso powder
  • 1/4 cup Dutch-process cocoa powder
  • 4 ounces semi-sweet chocolate bar, finely chopped
  • 6 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Using a mixer, cream butter and sugar until light and fluffy (about 5 minutes). Add eggs and vanilla; mix well for another minute.
  4. Gradually fold in the dry ingredients and mix on low speed. Add buttermilk until well combined—do not over-mix.
  5. Transfer less than half of the batter to another bowl. Warm reserved buttermilk and stir in espresso powder until dissolved. Pour into the separate bowl of batter, sprinkle with cocoa powder, and mix until combined.
  6. Spread a thin layer of vanilla batter in the pan, alternating spoonfuls of chocolate and vanilla batters until all batter is used. Level out using a knife to create zig-zag patterns.
  7. Bake for 65–75 minutes until a toothpick comes out clean.
  8. Cool in the pan for about 30 minutes before transferring to a cooling rack.
  9. For ganache, combine chopped chocolate and heavy cream in a heat-safe bowl over simmering water until melted. Let cool slightly before drizzling over the cake.
  10. Slice and serve slightly warm or at room temperature.
