  • 1 tablespoon olive oil
  • 1 cup mushrooms, chopped (such as cremini or button)
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 4 ounces herbed goat cheese, softened
  • 1/4 cup heavy cream
  • 1 large egg
  • Salt and pepper, to taste
  • Fresh herbs, such as thyme or parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry on a floured surface and cut into shapes to fit tartlet molds.
  3. Place pastry in molds and prick bases with a fork.
  4. Sauté chopped mushrooms, shallots, and garlic in olive oil until soft; season with salt and pepper.
  5. In a bowl, mix softened herbed goat cheese with heavy cream and egg until smooth.
  6. Stir in the sautéed mixture, then fill tart shells.
  7. Bake for 25-30 minutes until golden brown.
