  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 large red onion, cut into wedges
  • 2 red bell peppers, sliced
  • 1 small zucchini, sliced into half-moons
  • 200 g cherry tomatoes, halved
  • 120 g feta cheese, crumbled
  • 100 g pomegranate seeds
  • Fresh parsley, chopped
  • Lemon wedges for garnish

Instructions

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine olive oil, smoked paprika, oregano, cumin, salt, and pepper. Toss chicken breasts in the mixture until well coated.
  3. Arrange the seasoned chicken on the baking sheet and surround it with red onion wedges, bell pepper slices, zucchini rounds, and halved cherry tomatoes. Drizzle remaining olive oil over the vegetables and season lightly.
  4. Roast in the oven for about 30–35 minutes until chicken reaches an internal temperature of 74°C (165°F) and vegetables are tender.
  5. Once out of the oven, sprinkle crumbled feta cheese and pomegranate seeds over the chicken and veggies.
  6. Garnish with chopped parsley and serve immediately with lemon wedges.
