  • 1 ½ lbs. potatoes
  • 1 lb. green beans
  • 4 garlic cloves, minced
  • 1 ½ tbsp. olive oil
  • ½ tbsp. taco seasoning
  • ½ tbsp. oregano
  • ½ tsp. salt
  • ⅓ tsp. pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potatoes into medium-sized pieces. In a mixing bowl, toss them with olive oil, taco seasoning, oregano, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet in a single layer and roast for 15 minutes.
  4. Meanwhile, in the same mixing bowl (no need to wash), combine green beans with olive oil, minced garlic, and salt.
  5. After 15 minutes, add the green beans over the roasted potatoes on the baking sheet. Gently mix them together before returning to the oven.
  6. Roast for an additional 20–30 minutes until both vegetables are tender.
