  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 2 cups all-purpose flour
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for the cream cheese mixture)
  • 1 teaspoon vanilla extract (for the cream cheese mixture)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, combine cream cheese, 1/4 cup sugar, 1 egg, and 1 tsp vanilla; mix until smooth.
  3. In a large bowl, whisk together pumpkin puree, vegetable oil, sugars, eggs, and remaining vanilla until well combined.
  4. In another bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually add to the wet mixture until just combined.
  5. Pour half of the batter into the prepared pan; spoon half of the cream cheese mixture on top and swirl gently. Repeat with remaining batter and cream cheese mixture.
  6. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
