  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prep a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together the flour, oats, brown sugar, baking soda, and salt. Add melted butter and stir until combined.
  3. Press half of this crumble mixture into the prepared baking dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble mixture on top of the filling before baking for about 30-35 minutes until golden brown.
  7. Allow to cool completely before slicing into squares.
