  • ½ cup coconut oil or vegan butter
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup vegan chocolate chunks
  • ½ cup vegan marshmallows (halved)
  • ½ cup crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the pumpkin puree, melted coconut oil or vegan butter, brown sugar, granulated sugar, and vanilla until smooth.
  3. In another bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually fold the dry mixture into the wet mixture until just combined.
  5. Gently stir in the chocolate chunks, marshmallows, and crushed graham crackers.
  6. Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet.
  7. Bake for about 10–12 minutes until edges are set but centers remain soft.
  8. Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
