  • 4 large apples, peeled and diced
  • 1/4 cup salted butter, cubed
  • 2 tbsp apple cider or 1 tsp lemon juice
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • pinch of flaky sea salt
  • 1/2 cup granulated sugar
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • pinch of salt

Instructions

  1. In a large bowl, cream together softened salted butter, granulated sugar, and brown sugar until fluffy. Mix in eggs and vanilla extract.
  2. Gradually add dry ingredients (flour, baking soda, baking powder, salt, and spices); mix until combined.
  3. Chill dough for at least 30 minutes.
  4. Prepare apple filling by cooking diced apples with butter and spices until tender; cool.
  5. Make the salted caramel sauce by cooking sugar and butter until golden; stir in cream and salt, then let it thicken.
  6. Scoop chilled dough onto baking sheets and bake at 365°F for 10–12 minutes.
  7. Once cooled, fill cookies with apple mixture, sprinkle with crumble topping, and drizzle with caramel sauce.
