  • 6 tbsp unsalted butter, softened

  • ¼ cup (50g) brown sugar
  • 2 tbsp vegetable oil
  • 2 large eggs, room temperature
  • ½ cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, beat softened butter with granulated and brown sugars until fluffy.
  4. Mix in vegetable oil, eggs, mashed bananas, and buttermilk until combined.
  5. Gradually fold dry ingredients into wet ingredients until just mixed.
  6. Pour batter into the prepared pan and bake for about 40 minutes or until a toothpick comes out clean.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before frosting.
