1 cup cottage cheese
1 cup + 2 tablespoons all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon olive oil
2 ounces baby spinach, finely chopped
1/2 cup shredded mozzarella cheese
1 egg, lightly beaten
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mini food processor, blend the cottage cheese until smooth.
In a large bowl, combine the processed cottage cheese with flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Mix until well combined.
Shape the dough into a log about 6 inches long and divide it into 6 equal pieces. Form each piece into a flattened circle with a hole in the center.
Place the shaped flagels on the baking sheet and brush with beaten egg wash. Bake for 22-25 minutes until golden brown.
