Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 (8 oz) block cream cheese, softened
  • 2 cups granulated sugar
  • 6 large eggs
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 cup finely chopped fresh strawberries or strawberry puree
  • 2 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Optional: 1 tbsp cream cheese for extra richness (softened)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a Bundt pan.
  2. Cream the softened butter and cream cheese in a large bowl until smooth. Gradually add sugar, beating until fluffy—about 4-5 minutes.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk flour and salt, then gradually mix into the wet ingredients until just combined. Gently fold in chopped strawberries or puree.
  5. Pour batter into the prepared Bundt pan and bake for 75-85 minutes until a toothpick comes out clean. Cool for 15 minutes before transferring to a wire rack.
  6. For the glaze, whisk powdered sugar with heavy cream (or milk) and vanilla until smooth, then drizzle over cooled cake.
