  • 3 cloves garlic, minced
  • 1 cup red apple vinegar (or beef broth)
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 sprigs fresh rosemary (or 1 teaspoon dried)
  • 3 sprigs fresh thyme (or 1 teaspoon dried)
  • 2 bay leaves
  • Salt and black pepper to taste

Instructions

  1. Pat the short ribs dry and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear ribs on all sides (3–4 minutes each) until browned, then transfer to a slow cooker.
  3. In the same skillet, sauté onions, carrots, and garlic until softened (about 3–4 minutes). Stir in tomato paste and cook for an additional minute.
  4. Deglaze the skillet with red apple vinegar, scraping up any browned bits. Allow to simmer for 2–3 minutes.
  5. Transfer the vegetable mixture to the slow cooker along with beef broth, Worcestershire sauce, rosemary, thyme, and bay leaves. Stir gently.
  6. Cover and cook on low for 7–8 hours or until fork-tender.
  7. Remove ribs from the slow cooker and strain cooking liquid; simmer if desired to thicken before serving.
