  • 3 tablespoons light brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter
  • 1 cup sweet potato purée
  • ½ cup cold buttermilk
  • 1 tablespoon melted butter (for brushing)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, and salt.
  3. Cut in the cold butter until mixture resembles coarse crumbs.
  4. In another bowl, whisk sweet potato purée and buttermilk; add to dry ingredients.
  5. Stir until just moistened; add more buttermilk if necessary.
  6. Turn out onto a floured surface; knead gently 3-4 times and roll out to 1-inch thickness.
  7. Cut out biscuits using a biscuit cutter and place on the baking sheet.
  8. Bake for 18 to 22 minutes until golden brown; brush with melted butter before serving.
