  • ¾ cup buttermilk (room temperature)
  • 2 ½ tsp instant yeast
  • 2 tbsp granulated sugar
  • 3 large eggs (room temperature)
  • 3 ½4 cups bread flour
  • 1 ¼ tsp salt
  • 4 cloves garlic (finely chopped)
  • 6 tbsp salted butter (room temperature)
  • ¼ cup grated parmesan cheese
  • 2 cups grated cheddar cheese
  • ½ cup fresh chopped basil
  • 2 tbsp fresh chopped thyme
  • 1 tbsp fresh chopped oregano
  • 2 tbsp melted salted butter (for topping)
  • ¼ tsp garlic powder (for topping)

Instructions

  1. In a stand mixer, combine buttermilk, yeast, sugar, eggs, flour, and salt. Mix with a dough hook until combined (4–5 minutes). Add butter and mix until incorporated (2–3 minutes). If sticky, add more flour gradually.
  2. Cover the bowl tightly with plastic wrap and let it rise in a warm area for about two hours or until doubled in size.
  3. Roll out the risen dough into a rectangle (12 x 18 inches) and spread garlic herb butter mixture evenly over it. Sprinkle shredded cheddar cheese on top. Roll tightly from one long edge to form a log; pinch edges to seal.
  4. Cut the log lengthwise while leaving one end intact. Twist both halves together to expose filling.
  5. Transfer onto a parchment-lined baking sheet. Cover with plastic wrap and let it rise again for another 45 minutes.
  6. Preheat oven to 350°F (175°C). Brush melted butter mixed with garlic powder on top of the dough before baking for about 30–35 minutes or until golden brown.
