  • 1 pound ground beef
  • 1 ounce taco seasoning
  • 1 pint cherry tomatoes, halved
  • 4 green onions, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup Catalina dressing
  • 2 cups crushed nacho cheese Doritos
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Cook rotini pasta in boiling salted water according to package instructions until al dente. Drain and rinse with cold water.
  2. In a skillet over medium heat, brown ground beef until fully cooked, breaking it into crumbles.
  3. Stir in taco seasoning until well combined and remove from heat.
  4. In a large bowl, combine cooled pasta with seasoned beef, cherry tomatoes, green onions, cheeses, and Catalina dressing. Toss well to coat.
