  • 1 tbsp coconut oil
  • 1 lb beef sirloin or flank steak, thinly sliced
  • 23 tbsp Thai red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • 2 cups butternut squash, cubed
  • 1 tbsp fish sauce (or tamari)
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • 1/2 cup fresh basil leaves

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat. Sear the beef until browned and set aside.
  2. In the same pan, add Thai red curry paste, cooking for about 1 minute until fragrant. Stir in coconut milk and beef broth until combined.
  3. Add cubed butternut squash along with fish sauce and brown sugar; simmer uncovered for 10–15 minutes until fork-tender.
  4. Return seared beef to the pan, simmering for an additional 5 minutes to absorb flavors.
  5. Remove from heat and stir in lime juice and torn basil leaves.
  6. Serve over jasmine rice or cauliflower rice.
