  • 4 cups vegetable stock
  • 1 medium rutabaga (chunky pieces)
  • 4 large potatoes (chunky pieces)
  • ¼ head green cabbage (shredded)

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden brown; set aside.
  3. Lower heat to medium; sauté onions, carrots, and celery until softened. Add garlic and cook briefly.
  4. Sprinkle in flour, stirring to coat; cook for another minute.
  5. Gradually add vegetable stock while stirring to avoid lumps.
  6. Incorporate rutabaga, potatoes, cabbage, and seasonings; stir well.
  7. Bring to a boil then reduce heat to medium-low and let simmer uncovered for about 45 minutes until veggies are tender.
  8. Return seared vegan beef or mushrooms to the pot ten minutes before serving.
