  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 12 ounces mushrooms, finely chopped
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon balsamic vinegar
  • 1 cup walnuts, toasted
  • 2 tablespoons nutritional yeast
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Toast walnuts on a baking sheet for 6–8 minutes until fragrant.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  3. Stir in mushrooms, soy sauce, balsamic vinegar, thyme, smoked paprika, salt, and pepper. Cook until liquid evaporates (8–10 minutes).
  4. Transfer mushroom mixture and toasted walnuts to a food processor. Add nutritional yeast and blend until smooth, adding water or broth as needed for creaminess.
  5. Chill the pâté in the refrigerator for at least one hour before serving. Garnish with fresh parsley.
