  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • ½ cup coconut oil (solid, not melted) or vegan butter
  • ¾ cup coconut sugar or brown sugar
  • ¼ cup brewed espresso or strong coffee, cooled
  • 1 tablespoon flaxseed meal + 3 tablespoons water (flax egg)
  • 1 teaspoon vanilla extract
  • 1 cup raw cashews (soaked in hot water 12 hours, drained)
  • 3 tablespoons coconut cream
  • 3 tablespoons maple syrup (or powdered sugar)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, baking powder, salt, and cinnamon in a bowl.
  3. In a separate bowl, cream together solid coconut oil (or vegan butter) and sugar until fluffy. Add cooled coffee, flax egg, and vanilla; mix well.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Scoop tablespoon-sized dough balls onto prepared baking sheet; flatten slightly.
  6. Bake for 10–12 minutes until edges are set but centers are soft; cool completely on wire rack.
  7. Blend soaked cashews with coconut cream, maple syrup, vanilla extract, and lemon juice until smooth; chill for at least 30 minutes.
  8. Spread mascarpone filling between two cookies and dust with cocoa powder before serving.
